3 tbsp Jacoub’s Perfect Rub Seasoning
4–5 boneless skinless chicken breasts, cut into large cubes
1/2 cup extra virgin olive oil
2 large limes, juice of
1 yellow bell pepper, cut into 1 1/2-inch pieces
1 red bell, cut into 1 1/2-inch pieces
Sml mushroom whole
1. Generously coat chicken with Jacoub’s Perfect Rub Seasoning.
2. Place the chicken cubes in a dish with the sliced yellow onions and olive oil. Combine Jacoub’s Perfect Rub Seasoning and lemon juice and add them to the chicken dish. Toss the chicken making sure it is well coated. Cover. Refrigerate for at least 3 hours.
3. A few minutes before grilling, thread the chicken cubes, yellow peppers, red peppers, mushroom and cherry tomatoes onto skewers.
4. Lightly oil and heat a grill to medium-high heat. When ready, grill the chicken kebabs, turning occasionally, until chicken is fully cooked and juices run dry. Serve chicken kebabs with warm pita and tahini sauce.
Keep meat or veggies spaced out on the skewer to ensure they cook more evenly.
